The Talbert Research Group, in the Department of Food Science and Human Nutrition at Iowa State University, is focused on Protein Chemistry and Enzyme Technology to create innovative solutions that enhance the safety, sustainability, and affordability of food and bio-based products.

The strategic emphasis of our research is on Reporter Systems, Bioprocessing, Bioconjugation & Bioaffinity, and Post-Harvest Protein Dynamics.


Current applications of our research include:
  • Engineering rapid diagnostic methods to evaluate food safety and quality in low-resource settings
  • Improving the fabrication of biocatalytic materials for bioprocessing and sensor applications
  • Enhancing the understanding and management of protein interactions and functionality during processing

Our research goals are achieved through an interdisciplinary approach that emphasizes converging technologies, cutting-edge methodologies, and collaboration.
